When a new grocery store arrived in my neighborhood, I signed up for their emails and found my inbox was always full of meat promotions. I decided to have some fun and replied to a few of those meaty emails with  vegan memes and witty insights into the growing interest in plant-based foods. One day, after receiving a lobster recipe, I responded with a meme featuring a giant lobster throwing a chef into the pot, saying, “It’s your turn now!”

To my surprise, the store owner replied and invited me to meet him in his office.  I wasn’t sure what to expect, but when I arrived he offered me the opportunity to write a weekly recipe for their newsletter.  Two hundred recipes later, Jensen’s Foods continues to support plant-based foods education and sponsors many of our local free Vegan Cooking 101 family cooking classes.

THE HIGH SCHOOL SERIES: the early days of my simple, self-taught publishing lay-out, all created before I entered a professional digital media certificate program.

At Lincoln High School in the San Diego Unified School District,  students have access to their Vegan Cooking Club Cookbook. Read about how 500 students participated as a focus group to test non-dairy milk and special request veganized recipes for pan dulce created in the local Northgate Market’s panadaría.

Out of the eight high school vegan club cookbooks created between 2017-2019,  only one made it to their school’s website. But that may change as I revisit those schools,  re-gift them their vintage vegan publications, and offer support to help reestablish the vegan cooking clubs.
